Another semi-preserve format is the anchovy fillets in olive oil. To prepare this product, the mature Anchovies in salt is used as the raw material.

First it is washed to reduce the salt content and remove the skin. The anchovy is then gently dried before undergoing a laborious filleting, cleaning and packing process. The care and attention with which this process is carried out is one of the secrets to Conservas Lolin’s success.

When the anchovies have been packed they move onto the oil dosage and automatic sealing line. The oil used by Conservas Lolin is one of the distinguishing features of the unique flavour of their anchovies: top-quality olive oil which neither makes the fish bitter nor takes away its flavour.

This product, once packed, is preserved in refrigerated chambers with temperature control to ensure its safety and quality.
