Anchovies in salt

Lolin is present at the harbour auctions and bids to obtain the best batches. At our premises, rigorous quality checks are then carried out on the weight and size of each fish using specialised machinery.

Skilled hands then prepare the fish for maturing. Processes that we have been doing since 1954, in a tradition passed down by the Romans.

Once the fish is at its optimum point of maturity, it is sealed and stored in a refrigerator.
